Hand Crafted Gin and Limoncello

Here at Lavender Hill we are always looking for ways to create high quality products that make use of the fresh, spray free harvests. Match that with a love of quality spirits and cocktails and you have a great combination! We started with our very special Limoncello. To create this we use Yen Ben lemons from the farm. These are hand peeled and then steeped in 96% alcohol for up to 4 weeks. What makes our Limoncello so great is the length of time we dedicate to steeping and the purity of the high alcohol content (not the typical 40% alcohol from the local shop!). This hand crafted process extracts the maximum goodness from the lemons.

Next, we partnered with a high quality gin maker and infused our Angustifolia Lavender oil (from our “English Lavender” field). We hand harvest in late January each year and process the oil in our own large steam still. What is important in the lavender gin is to create subtle overtones. Our repeat customers are a testament to getting this right!

Our most recent product is a Saffron Gin. We don’t grow saffron on the farm, but were looking to ramp up the exclusivity a bit! We have partnered with a 100% organic saffron farm in Nelson to source top quality saffron. Like our own produce, the saffron is spray free and hand harvested. After a lot of trial and error we have perfected the infusion time for the raw saffron threads in the gin. It is pure nature that results in this stunning golden yellow gin.

An instantly likable refreshing drink; the fabulously aromatic bouquet shows lemon curd, vanilla, nougat   and   apple   blossom   characters,   leading   to   a   delectable   palate   that   is   filled   with   bright lemon   flavours,   wonderfully   enhanced   by   creamy   mouthfeel   and   silky   texture.   It   is   bright, flavoursome   and   delightfully   sweet,   but   not   overly   sweet,   brilliantly   framed   by   zesty acidity.

It is sweetly fragrant on the nose showing fabulous juniper, orange peel, jasmine and spice aromas with a whispering nuance of lavender. Very seductive and highly attractive. On the palate, it is beautifully rounded and soothing, wonderfully enhanced by silky mouthfeel. This is gorgeous gin first and foremost with a delightful infusion of elegant lavender notes.

It is unmistakably gin with distinctive aromas of juniper and other gorgeous botanicals, with a touch of opulence from the saffron infusion. It is vibrant and refreshing, and plush and silky at the same time with whispering notes of earthy undertones and bright orange peel. Splendidly composed and expressed, making it highly enjoyable with added complexity.

Saffron Gin

First you need to make a grapefruit syrup and to make it you need 1lt of grapefruit, preferably freshly squeezed grapefruit juice because you need the grapefruit skin too. Boil 300ml of water and 300g sugar to make syrup but boil them together with 4 grapefruit skin by using the leftover grapefruit from juicing, bring it to boil and fine strain them and mix with the grapefruit juice after cool down. Do not boil the grapefruit juice.

45ml saffron gin
30ml grapefruit syrup
30ml lemon juice
30ml egg whites

Wet shake all ingredients (with ice)
Strain it
Re shake it without ice
Double strain into a coupette glass
Garnish with fresh dill or dehydrated lemon
